We love the taste of fresh grown garden tomatoes!

Gypsy Tomatoes

Gypsy Tomatoes are not only pretty in the garden, but are so sweet and delicious.  I loved watching these tomatoes grow and ripen in the garden.  And when they were ripe, the colors on the tomato were so beautiful that I knew this recipe was a perfect match. They make a beautiful addition to this tasty appetizer.

Gypsy Tomatoes with Fresh Mozzarella Cheese

Ingredients

2 fresh Gypsy Tomatoes (you can use any fresh tomato)
5 – 6 fresh Basil Leaves (I used a Red Lettuce Leaf Basil for the taste and color)
1 small ball Fresh Mozzarella Cheese, thinly sliced about 1/4″
Olive Oil
Kosher Salt
Fresh Ground Pepper

Directions

Slice the fresh tomato into 1/2″ slices and place on a platter.

Drizzle with Olive Oil and season with salt and pepper.

Wash and tear the basil leaves to fit on the tomato just hanging over the edge.  Place on top of the tomato.

Top with the sliced Mozzarella Cheese and serve.

Note: You can add a couple of drops of Red Wine Vinegar, or Tarragon Vinegar, but I prefer the sweetness of the fresh tomato.
