I have a lot of Lime Basil growing…

Lime BasilI grow Lime Basil around the patio because it’s supposed to help keep away the mosquitoes.  I love the smell of the citrus, and the pretty white flowers.

Lime Basil is really a tasty addition to several recipes, fish, chicken and I love to make cookies.

You can harvest the basil and make cookie dough rolls and freeze so you can enjoy cookies all year round.

Lime Basil Butter Cookies

Lime Basil Cookies

Ingredients

1 cup fresh Lime Basil Leaves
1 3/4 cup Sugar, divided
4 sticks Butter, softened
1/4 cup fresh Lemon Juice
1 large Egg
6 cups All-Purpose Flour

Directions

Preheat oven to 350F degrees.

Process basil and 1/4 cup sugar in food processor until blended.

Beat butter in a mixing bowl until creamy.  Gradually add remaining sugar beating well and is light and fluffy.  Add lemon juice and egg, beating until blended.  Mix in the Basil mixture.  Gradually add flour beating until blended.

Shape dough into 1″ balls and place 2″ apart on a parchment paper lined cookie sheet, sprayed lightly with oil.  Flatten with bottom of a glass dipped in sugar.  Bake for 8 – 10 minutes or until edges are slightly golden.  Cool on rack.

Note:  You can make several batches of the cookie dough and roll in a log and wrap in plastic wrap.  Place all the logs in a freezer zip lock bag.  When you want to make cookies, remove from freezer and thaw, not all the way, but still firm so you can slice with a knife.  Place the cookie slices on a parchment lined cookie sheet, sprinkle a little sugar on top and bake.
